Organic Anzac Biscuits
This tasty tradition will take you back to childhood, the warm, buttery way!

organic butter |

2 tbsp |
organic maple syrup |

1 cup |
organic white spelt flour |
|
1 cup |
organic rolled oats |
|
1 cup |
organic desiccated coconut |
|
1 cup |
organic rolled oats |
|
3/4 cup |
organic rapadura sugar |
|
1 tbsp |
water |
|
1/2 tsp |
bicarbonate of soda |
METHOD
Preheat oven to 175 deg C. Grease or line two baking trays. Melt the butter and maple syrup together in a saucepan over a low heat. Mix together the flour, oats, coconut and rapadura sugar in a bowl. Stir the water and the bicarbonate of soda into the butter and syrup mixture and then add it to the dry mixture. Stir thoroughly, and then divide into balls. Place them on the baking trays, spaced well apart (as they will spread.) Makes about 20 (if you do not eat too much of the delicious mixture before it gets baked!) Bake at 175 deg C for about 15 minutes, until golden. Cool on wire wracks. Enjoy!
