Laissez-faire Catering adds a new cafe to its growing retail operation

Laissez-faire Catering can stand the heat and is expanding its kitchen. After winning the tender to operate a new cafe at the Mater Hospital in North Sydney in November 2008, Laissez-faire is busy preparing to open the latest outlet in its growing retail chain in mid-February this year.

Arthur Spiropoulous, manager of Laissez-faire’s retail operation, says the recent win is testimony to the caterer’s ability to deliver great service and high-quality catering on any scale.

“With over 20 years of experience in this game catering at all types of occasions, for 5,000 through to as few as 15 people, we are stoked to be serving our hungry customers in more and more cafe venues too.”

Laissez-faire is best known as a caterer for corporate events, conference functions and private entertaining, in particular weddings. Its retail operation, launched in 1998, is the quiet achiever of the business.

Bites cafe at the Mater Hospital will be the newest addition to a group of Sydney outlets that includes the bistro and cafe at the Australian Museum, Bites and The Last Stop cafes at Australian Technology Park, Bites cafe at St Vincent’s Hospital and Cafe Trim at the State Library of NSW.

Since securing the Mater tender Laissez-faire has been fuelling the coffee lovers building the facility where the new Bites will be located, from an on-site coffee cart. That’s commitment to service.

Laissez-faire welcomes Executive Chef ...    

Our Executive Chef Brad Pittman heads up our kitchen team in May. After beginning his career 17 years ago, Brad has been quietly working away honing his culinary skills in the best 4 & 5 star hotels and resorts across Australia, including the award winning ‘The Queens’ restaurant in Perth and heading up the team in Melbourne’s Mercure Hotel.

Brad has developed his own style of cookery with a strong influence from the
Mediterranean region, while using the freshest Australian produce.

MTV Australia Awards April 2008

Australian Technology Park was the home of the MTV Australia Awards 2008. MTV utilised every square inch of the events centre and held the main show in the exhibition hall. The Bay 8 Atrium was transformed into a pre-party area complete with SingStar, photo booths, manicure stations and barrels of chupa chups.


Throughout the night interviews took place from small sets created within the historic machinery display in the Locomotive Workshop. MTV loved the unique, gritty nature of the venue and stuck with the industrial theme using old storage containers to create an on-camera green room for the stars presenting and performing at the show.


Aside from having such a unique event space ATP was able to deliver MTV’s practical requirements with 14+ meeting rooms to be used as production offices, a necessity for an event of this size.

The park buzzed for the week with more than 350 MTV staff and crew working on-site and all catering done by Laissez-faire catering.
